Alo Baingan Raita Written Recipe With Directions Ingredients: -Brinjal (Baingan) 2 big size -Potato (Alo) 1 big size (cut it in any shape of your choice) -Cooking oil 2-3 tbs -Yogurt (dahi) without water 750 g -Milk ( dhoodh) 3-4 tbs -Tomato (tamatar) 1 big size chopped (remove seeds) -Onion (piyaz) 1 big size chopped (without water) -Green chillies (hari mirch) 3 cut them in ring shape (remove seeds) -Cumin seeds (zeera) powder 1/4 tsp -Red chilli (Lal mirch) powder 1/4 tsp -Salt (namak) 1/2 tsp -Garlic (lehsan) Julienne cut -Chat masala 1/2 tsp -Salt (namak) 1/4 tsp -Fresh coriander (dhania) for garnishing Directions: -Cut the Brinjal in slices with the help of a cutter. -On a griddle, add oil and heat it. Add brinjals and shallow fry them for 4 mins (each side 2 mins). -In a pan, add cooking oil and heat it. Add potato, cover, and shallow fry it for 5-7 mins. Set aside the leftover oil for later use. -In a bowl, add yogurt and milk. Whisk well with the help of a hand beater. -Add tomato, onion, green chillies, cumin seed powder, red chilli powder, and salt. Mix well. -Add fried brinjals and fried potatoes. Mix well. -In a pan, add the leftover 1 1/2 tbs oil, add more 2 tbs oil, and heat it. -Add garlic and cook until color changes. -Add chat masala and salt. Mix well. Tadka is ready! -Add tadka to raita. Mix well. -Garnish with fresh coriander -Dist out, serve, and enjoy with Rice or Paratha.
