Creamy Tikka Buns Recipe by Food Fusion
Recipe in English: Ingredients: Prepare Creamy Tikka Filling: -Cooking oil 2 tbs -Pyaz (Onion) chopped 1 small -Boneless chicken small cubes 400g -Adrak lehsan paste (Ginger garlic paste) 1 tbs -Tikka masala 2 tbs -Dahi (Yogurt) whisked 3 tbs -Cooking oil 1 tsp -Maida (All-purpose flour) 1 & ½ tbs -Olper’s Milk ½ Cup -Olper’s Cream ¾ Cup -Anday ki zardi (Egg yolk) 1 -Olper’s Milk 2 tbs Prepare Dough: -Bareek cheeni (Caster sugar) 2 tsp -Khameer (Instant yeast) 2 tsp -Warm water ½ Cup -Himalayan pink salt 1 tsp -Cooking oil 2 tbs -Anda (Egg) 1 -Maida (All-purpose flour) sifted 3 Cups -Warm water ¼ Cup or as required -Cooking oil 1 tsp -Hari mirch (Green chilli) sliced -Hara dhania (Fresh coriander) chopped -Makhan (Butter) melted Directions: Prepare Creamy Tikka Filling: -In a frying pan,add cooking oil,onion & sauté for 1-2 minutes. -Add chicken,ginger garlic paste & mix well until it changes color. -Add tikka masala,yogurt,mix well & cook for 4-5 minutes then cook on high flame until it dries up. -In the center of frying pan,add cooking oil,all-purpose flour & sauté for a minute then mix well everything. -Add milk,mix well & cook on medium flame for 2 minutes. -Turn off the flame,add cream,mix well & set aside. Prepare Dough: -In a bowl,add caster sugar,instant yeast,warm water & mix well,cover & let it rest for 5 minutes. -Add pink salt,cooking oil,egg & whisk well. -Add all-purpose flour & mix well. -Gradually add warm water,mix well & knead until dough is formed. -Grease the dough with cooking oil,cover & let it proof for 1 hour at warm place. -Sprinkle dry flour & knead until hard dough is formed. -Divide the dough into six equal portions (90g each). -Take a portion,make a ball,sprinkle dry flour & roll out with the help of rolling pin. -Place prepared creamy tikka filling (2-3 tbs) in the center of rolled dough,add green chilli,fresh coriander then pull & wrap the remaining part of dough than twist it slightly & spread the frill of dough on the dough ball. -Place prepared dough balls on a tray lined with butter paper,cover with a kitchen cloth & let it proof for 15 minutes. -In a bowl,add egg yolk,milk,whisk well & apply on dough balls. Option # 1: Baking -Bake in preheated oven at 180C for 20-25 minutes. Option # 2: Air Fryer -Air fry in preheated air fryer at 150C for 8-10 minutes. -After baking,apply melted butter. -Serve with tomato ketchup (makes 6)!
